It’s frustrating. You&amp;rsquo;re fighting a losing battle with inconsistent crusts and timing that never quite lines up.&#xA;We figured out a way to fix this. The secret? We ditch the standard heating elements and swap in high-density shortwave infrared (IR) bulbs.&#xA;&lt;strong&gt;Why this actually works&lt;/strong&gt;&#xA;Here&amp;rsquo;s the thing about standard convection or resistive heat: it relies on warming the air. But air is honestly terrible at moving heat.&#xA;Our IR bulbs do things differently. They send out electromagnetic radiation that hits the dough directly. It doesn&amp;rsquo;t care about air circulation. Because we set these bulbs up in zones, you can basically &amp;ldquo;pump&amp;rdquo; extra energy into the edges of the oven. This cancels out the heat that usually leaks through the oven walls.&#xA;&lt;strong&gt;The nitty-gritty stuff&lt;/strong&gt;&#xA;We make these tubes with high-purity quartz glass and tungsten filaments. Since they&amp;rsquo;re shortwave, the heat sinks into the dough fast instead of just making the oven air feel hot.&#xA;Depending on what your power grid looks like, we can spec these at 230V or 400V. If you go with the higher voltage, you can run longer tubes without losing power as you move down the line.&#xA;And if you&amp;rsquo;re swapping these into an old rig, just double-check your sockets. We usually stick with R7s or SK15 connectors. They stay put, even when the oven is vibrating.&#xA;&lt;strong&gt;A few things to watch out for&lt;/strong&gt;&#xA;These bulbs pack a punch. They heat up incredibly fast. But that means your control system has to keep up. You&amp;rsquo;ll need fast-acting PID controllers. If your sensors are sluggish, you&amp;rsquo;ll overshoot your temp and end up with burnt edges instead of pale ones.&#xA;One more tip: don&amp;rsquo;t just line the bulbs up in a straight row.&#xA;Angle them. Let the radiation patterns overlap. This kills off those annoying cold spots between the tubes. Also, make sure your wiring can handle the current draw, or you&amp;rsquo;ll be looking at burnt-out terminals.&lt;/p&gt;</description>
